Homemade Beer Bread

Our Sunday night dinner tonight was pretty simple. I put a bunch of chicken drumsticks in the crock pot this morning, covered them with a jar of Sweet Baby Ray’s barbecue sauce, and walked away. We also had Birds Eye Steamfresh rice with veggies (thanks, Target!) and Beer Bread (except the GF part of the family). When I was still eating wheat, I left a note to myself to try adding a little bit more sugar next time, so if you like your bread sweet, you might increase the sugar to 1/4 cup.

3 cup all purpose flour
3 tsps baking powder
1 1/2 tsp salt
3 Tblsps sugar
1 (12 oz) can of beer
3 Tblsps melted butter

Preheat oven to 375. Lightly grease or spray a 9 x 5 x 3 inch loaf pan with nonstick cooking spray. Combine all ingredients, mix well. Pour into pan and top with melted butter. Bake for 50 -55 min, or until bread is lightly brown and pulls away from the pan. Remove from oven and let cool for 10 minutes in the pan. Remove to racks to cool completely, or serve warm.
