I have never made Taquitos before. But I did cook an 18 lb turkey on Sunday and we have a lot of leftovers. Plus I have many bottles of Wesson oil in my house 🙂 The kids loved these! Here’s the recipe, which is from my Favorite Brand Name Chicken Collection cookbook, which is out of print but available over on Amazon for just .01! Just follow the link to see it. I did modify the recipe slightly. I used a regular onion instead of a green onion, I omitted the parsley, and I also omitted the fresh tomatoes (my kids don’t like them, but they love salsa, go figure!). I also wanted to add that these are gluten-free!
12 corn tortillas
1 lb. shredded cooked turkey (or chicken)
1 onion, chopped
1 package Taco seasonings (I used Ortega)
3/4 cup hot water
1 clove garlic (I used a heaping tsp from my jarred garlic in oil)
Sprinkle every tortilla with water (lightly). Wrap stack in aluminum foil and place in a 200 degree oven for 10 minutes to soften. Leave in foil until ready to use. In skillet, combine chicken, seasonings, water, onion, and garlic. Blend well. Bring to a boil; reduce heat and simmer 10 minutes. Place 2 Tblsps chicken mixture in center of each warmed tortilla. Roll up tortillas tightly; secure with toothpicks. In large, deep saucepan, heat oil to 375. Fry rolled tortillas in oil until golden brown and crisp. Drain on paper towels. Keep warm in oven; remove toothpicks before serving. Can be served on lettuce with salsa and guacamole for a garnish. And here’s what they looked like in the pan:
